Classic cheesecake

INGREDIENTS:

  • 1000 g Käsekuchezauber (cheesecake mix)
  • 8 eggs
  • 2 packets vanilla pudding powder
  • 200 g sugar
  • 200 g butter

PREPARATION:

Grease a springform pan (Ø 24 cm) and lightly dust with flour. Preheat the oven to 150 degrees. Separate the eggs. Beat the egg whites with some of the sugar and salt until stiff. Refrigerate until ready to use. Melt the butter and set aside to cool. Mix the quark with the pudding and cooled butter. Mix the egg yolks and sugar to form a light cream. Beat with a mixer on high speed for about 5 minutes until a light, creamy mixture has formed that has doubled or tripled in volume. Add to the quark mixture and mix. Carefully fold the egg white mixture into the quark mixture little by little. Pour the mixture into the prepared springform pan and bake the cheesecake in the preheated oven for about 100 minutes. Leave the cheesecake to cool in the oven. The cheesecake will sink again as it cools.
